ULTA SAMOSA
INGREDIENTS:
- 1 cup all-purpose flour
- 1/4 teaspoon carom seeds (ajwain)
- Salt, to taste
- Water, as needed
- Oil, for frying
- 2 cups boiled and mashed potatoes
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- Salt, to taste
- 1/2 cup green peas
- 1/2 cup finely chopped onions
- 2 tablespoons chopped coriander leaves
- 1 tablespoon lemon juice.
INSTRUCTIONS :
- In a mixing bowl, add all-purpose flour, carom seeds, salt, and water as needed to make a stiff dough. Knead the dough for 5-7 minutes until smooth. Cover the dough and let it rest for 20 minutes.
- In a pan, heat oil over medium heat. Add cumin seeds and let them crackle. Then add mashed potatoes, turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
- Add green peas, onions, coriander leaves, and lemon juice. Mix well and cook for another 2-3 minutes.
- Divide the dough into small portions and roll each portion into a thin circle. Cut each circle in half.
- Take one half-circle and form a cone shape by bringing the two straight edges together, overlapping them slightly, and pressing the seam to seal it.
- Fill the cone with the potato and pea mixture, leaving a little space at the top. Wet the edges of the dough with water and bring them together to seal the samosa.
- Heat oil in a pan over medium heat. Once the oil is hot, gently add the samosas and fry until golden brown and crisp.
- Serve the ulta samosas hot with mint chutney or tamarind chutney.
