                                  ULTA SAMOSA 

 

                            INGREDIENTS:
  • 1 cup all-purpose flour
  • 1/4 teaspoon carom seeds (ajwain)
  • Salt, to taste
  • Water, as needed
  • Oil, for frying
  • 2 cups boiled and mashed potatoes
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt, to taste
  • 1/2 cup green peas
  • 1/2 cup finely chopped onions
  • 2 tablespoons chopped coriander leaves
  • 1 tablespoon lemon juice.

                            INSTRUCTIONS :

  • In a mixing bowl, add all-purpose flour, carom seeds, salt, and water as needed to make a stiff dough. Knead the dough for 5-7 minutes until smooth. Cover the dough and let it rest for 20 minutes.

  • In a pan, heat oil over medium heat. Add cumin seeds and let them crackle. Then add mashed potatoes, turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.

  • Add green peas, onions, coriander leaves, and lemon juice. Mix well and cook for another 2-3 minutes.

  • Divide the dough into small portions and roll each portion into a thin circle. Cut each circle in half.


  • Take one half-circle and form a cone shape by bringing the two straight edges together, overlapping them slightly, and pressing the seam to seal it.

  • Fill the cone with the potato and pea mixture, leaving a little space at the top. Wet the edges of the dough with water and bring them together to seal the samosa.


  • Heat oil in a pan over medium heat. Once the oil is hot, gently add the samosas and fry until golden brown and crisp.


  • Serve the ulta samosas hot with mint chutney or tamarind chutney.
