ALOO BAINGAN MASALA
Recipe for Aloo Baingan Masala:
Ingredients:
- 2 medium potatoes, diced
- 1 medium eggplant, diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 green chili, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt, to taste
- Oil or butter, for frying
- Fresh coriander, for garnish
Instructions:
1. Heat oil or butter in a pan over medium heat.
2. Add cumin seeds and let them sizzle.
3. Add onions, garlic, and green chili.
Saute until onions are translucent.
4. Add turmeric powder, red chili powder, and garam masala. Cook for 1 minute.
5. Add diced potatoes and eggplant. Mix well.
6. Cook for 10-12 minutes or until the vegetables are tender.
7. Season with salt to taste.
8. Garnish with fresh coriander and serve hot.
Tips:
- Use fresh potatoes and eggplant for the best flavor.
- Adjust the amount of red chili powder to your desired level of spiciness.
- You can add other ingredients like tomatoes or spinach to vary the flavor.
- Serve with rice or naan bread for a complete meal.
