 AMRITSARI KULCHA 


DESCRIPTION:-


 A simple recipe for Amritsari Kulcha:



INGREDIENTS:


For the dough:


- 2 cups all-purpose flour

- 1 teaspoon salt

- 1 teaspoon sugar

- 1/2 teaspoon active dry yeast

- 1/2 cup lukewarm water

- 2 tablespoons ghee or oil



FOR THE STUFFING:


- 1/2 cup paneer (Indian cheese), crumbled

- 1/2 cup chopped cilantro

- 1/4 cup chopped green chilies

- 1/4 cup grated ginger

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon coriander powder

- Salt, to taste



INSTRUCTIONS:


1. To make the dough:


    - In a large mixing bowl, combine flour, salt, sugar, and yeast.

    - Gradually add lukewarm water and mix until a smooth dough forms.

    - Add ghee or oil and knead for 5-7 minutes.

    - Cover and let the dough rest for 1-2 hours or until it has doubled in size.


2. To make the stuffing:


    - In a small mixing bowl, combine paneer, cilantro, green chilies, ginger, cumin seeds, coriander powder, and salt. Mix well.


3. To assemble the kulcha:


    - Divide the dough into 6-8 equal portions.

    - Roll out each portion into a thin circle.

    - Place a tablespoon or two of the stuffing in the center of each circle.

    - Fold the dough over the stuffing and seal the edges.


4. To cook the kulcha:


    - Preheat a non-stick skillet or tava over medium heat.

    - Place a kulcha on the skillet and cook for 1-2 minutes or until it's golden brown.

    - Flip the kulcha and cook for another 1-2 minutes or until it's golden brown.


5. Serve hot with chole (chickpea curry), butter, or raita (yogurt and cucumber sauce).


  



TIPS AND VARIATIONS:



- Use a mix of all-purpose flour and whole wheat flour for a healthier option.


- Add some chopped onions, garlic, or ajwain seeds to the stuffing for extra flavor.


- Use a kulcha maker or a pizza stone to cook the kulcha for a crispy crust.


CONCLUSION:-


Serve with a dollop of butter or a sprinkle of cilantro for added flavor.
