   BAINGAN kA BHARTA 


DESCRIPTION:- 


A Simple recipe for Baingan Ka Bharta:


Ingredients:


- 2 large eggplants (baingan), roasted

- 2 medium onions, chopped

- 2-3 green chilies, chopped

- 1 teaspoon ginger paste

- 1 teaspoon garlic paste

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- Salt, to taste

- 2 tablespoons mustard oil or vegetable oil

- Chopped cilantro, for garnish



INSTRUCTION:-


1. Roast the eggplants over an open flame or in the oven until they're charred and soft.


2. Peel the eggplants and mash them in a bowl.


3. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.


4. Add chopped onions and sauté until they're translucent.


5. Add green chilies, ginger paste, and garlic paste. Sauté for another minute.


6. Add cumin powder, coriander powder, turmeric powder, and red chili powder. Mix well.


7. Add the mashed eggplant and mix well.


8. Add salt to taste and mix well.


9. Reduce heat to low and simmer for 5-7 minutes or until the flavors have melded together.


10. Garnish with chopped cilantro and serve with rice, roti, or paratha.

   



TIPS AND VARIATIONS:- 


- Use a mix of spices, such as garam masala, amchur powder, or kasoori methi, to add depth to the dish.


- Add some chopped tomatoes or bell peppers to add extra flavor and texture.


- Use roasted garlic instead of raw garlic for a deeper flavor.


- Serve with a dollop of raita (yogurt and cucumber sauce) to cool down the spiciness.
