 CHOLE PANEER MASALA 


DESCRIPTION:-

INGREDIENTS:- 



For the Chole Masala:


- 1 cup dried chickpeas, soaked overnight and drained

- 2 medium onions, chopped

- 2 cloves garlic, minced

- 1 medium ginger, grated

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon ground cinnamon

- 1/2 teaspoon ground cardamom

- 1/4 teaspoon ground cayenne pepper (optional)

- 1/2 teaspoon salt

- 2 tablespoons vegetable oil

- 2 medium tomatoes, diced

- 1 tablespoon tomato puree

- 2 tablespoons chole masala powder (available at Indian grocery stores)

- 2 cups water



For the Paneer Masala:


- 250 grams paneer (Indian cheese), cut into small cubes

- 1 tablespoon butter

- 1 teaspoon garam masala powder

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper



Instructions:



1. To make the Chole Masala:


    - Heat oil in a large saucepan over medium heat. Add the onions and cook until they're lightly browned, about 5-7 minutes.


    - Add the garlic, ginger, cumin, coriander, cinnamon, cardamom, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.


    - Add the chickpeas, salt, and 2 cups of water. Bring to a boil, then reduce the heat to low and simmer, covered, for 30-40 minutes or until the chickpeas are tender.


    - Stir in the diced tomatoes, tomato puree, and chole masala powder. Simmer, uncovered, for an additional 10-15 minutes or until the sauce has thickened.


2. To make the Paneer Masala:


    - Heat butter in a small saucepan over medium heat. Add the paneer cubes and cook until they're lightly browned on all sides, about 5-7 minutes.


    - Stir in the garam masala powder, salt, and black pepper. Cook for 1 minute.


3. To assemble the Chole Paneer Masala:


    - Add the cooked paneer cubes to the Chole Masala saucepan. Stir gently to combine.


    - Simmer the mixture, uncovered, for an additional 5-10 minutes or until the paneer has absorbed the flavors of the sauce.


    - Serve the Chole Paneer Masala hot, garnished with chopped cilantro and accompanied by basmati rice, naan bread, or bhature.



Note: You can adjust the amount of chole masala powder to your taste, and also add other spices or herbs to the sauce for added flavor.
