*Idli Recipe:*


Ingredients:


- 1 cup idli rice

- 1/2 cup urad dal

- 1/2 cup water

- 1/4 teaspoon salt

- 1/4 teaspoon methi seeds (optional)


Instructions:


1. Soak the idli rice and urad dal in separate bowls for 4-5 hours.


2. Grind the urad dal into a smooth paste using a blender or grinder.


3. Grind the idli rice into a coarse paste.


4. Mix both pastes together, adding salt, methi seeds (if using), and water.


5. Ferment the mixture overnight or for 8-10 hours.


6. Pour the batter into idli molds and steam for 15-20 minutes.



*Chutney Recipe:*


Ingredients:


- 1 cup fresh coconut

- 1/2 cup green chilies

- 1 small onion, finely chopped

- 2 cloves garlic, minced

- 1/2 teaspoon ginger paste

- Salt, to taste

- 2 tablespoons lemon juice

- 1/4 cup water



Instructions:


1. Grind the coconut, green chilies, onion, garlic, and ginger paste into a smooth paste using a blender or grinder.


2. Add salt, lemon juice, and water, and mix well.


3. Adjust the consistency and taste as needed.

Serve the idlis hot with the fresh coconut chutney. 


Tips:


- Use a non-stick idli mold for easy removal.


- Adjust the spice level in the chutney to your taste.
