     JANMASTAMI SPECIAL KHEER

INGREDIENTS:- 



- 1 cup basmati rice

- 4 cups full-fat milk

- 1/4 cup granulated sugar

- 1/4 teaspoon salt

- 1/2 teaspoon ground cardamom

- 1/4 teaspoon ground saffron threads, soaked in 1 tablespoon hot water

- 1 tablespoon chopped pistachios or almonds

- 1 tablespoon ghee or unsalted butter

- 1/4 teaspoon rose water (optional)



INSTRUCTIONS:- 


1. Rinse the rice thoroughly and soak it in water for 30 minutes. Drain and set aside.


2. In a large saucepan, combine the milk, sugar, and salt. Heat over medium heat, stirring occasionally, until the sugar dissolves and the milk comes to a boil.


3. Add the soaked rice to the milk mixture and cook, stirring frequently, until the rice is cooked and the milk has thickened, about 20-25 minutes.


4. Stir in the ground cardamom, saffron with its soaking liquid, and chopped nuts. Cook for an additional 2-3 minutes.


5. Remove the saucepan from the heat and stir in the ghee or butter until melted. If using rose water, stir it in at this point.


6. Transfer the kheer to a serving dish or individual bowls. Garnish with additional chopped nuts and saffron threads, if desired.


7. Refrigerate the kheer for at least 2 hours or overnight to allow the flavors to meld together.


8. Serve the Janmastami Special Kheer chilled, as an offering to Lord Krishna or as a sweet treat for your loved ones.



  



Note: You can adjust the amount of sugar to your taste, and also add other nuts or dried fruits to the kheer for added texture and flavor.
