 KASHMIRI CHICKEN MASALA

INGREDIENTS:



- 1 1/2 pounds boneless, skinless chicken thighs or legs, cut into bite-sized pieces

- 1/2 cup plain yogurt

- 2 medium onions, thinly sliced

- 2 cloves garlic, minced

- 1 medium ginger, grated

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon ground cardamom

- 1/2 teaspoon ground cayenne pepper (optional)

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 2 tablespoons Kashmiri red chili powder (or substitute with paprika)

- 2 tablespoons chopped fresh cilantro (for garnish)



INSTRUCTIONS:


1. In a large bowl, whisk together yogurt, lemon juice, ghee or oil, cumin, coriander, cinnamon, cardamom, cayenne pepper (if using), salt, and black pepper.


2. Add the chicken to the marinade and mix well to coat. Cover and refrigerate for at least 2 hours or overnight.


3. Heat 2 tablespoons of ghee or oil in a large saucepan over medium heat. Add the sliced onions and cook, stirring occasionally, until they are lightly browned and caramelized, about 8-10 minutes.


4. Add the minced garlic and grated ginger to the saucepan and cook for 1 minute, stirring constantly.


5. Remove the chicken from the marinade, letting any excess liquid drip off. Add the chicken to the saucepan and cook until it is browned on all sides and cooked through, about 6-8 minutes.


6. Stir in the Kashmiri red chili powder (or paprika) and cook for 1 minute.


7. Add 1 cup of water to the saucepan and bring to a simmer. Reduce the heat to low and cook, covered, until the sauce has thickened and the chicken is fully coated, about 10-15 minutes.


8. Garnish with chopped cilantro and serve over basmati rice or with naan bread.


   





Note: Kashmiri red chili powder is a mild, sweet spice blend that is commonly used in Kashmiri cuisine. If you can't find it, you can substitute with paprika or a mild red chili powder.
