KUTCHI DABELI
DESCRIPTION:-
It is a popular snack food of India, originating in the Mandvi-Kutch, Gujarat region. It is a spicy yet sweet snack made by mixing boiled potatoes with a special dabeli masala, putting the mixture in a ladi pav (similar to a burger bun), and serving it with chutneys made from tamarind, date, garlic, red chilies and other ingredients. It is garnished with pomegranate and roasted peanuts.
INGREDIENTS:-
For the Dabeli Masala:
- 2 tablespoons coriander seeds
- 1 tablespoon cumin seeds
- 1 tablespoon fennel seeds
- 1 tablespoon cinnamon sticks
- 2-3 cloves
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt, to taste
For the Dabeli:
- 4-6 pav buns (or bread buns)
- 1/2 cup mashed potatoes
- 1/2 cup mashed chickpeas
- 1/4 cup Dabeli Masala (above)
- 1/4 cup chopped onions
- 1/4 cup chopped cilantro
- 1/4 cup tamarind chutney
- 1/4 cup date and tamarind chutney
- 1-2 tablespoons butter or ghee
- Sev (fried gram flour noodles) for garnish
METHODS:
1. Dry roast the coriander seeds, cumin seeds, fennel seeds, cinnamon sticks, and cloves until fragrant.
2. Grind the roasted spices into a fine powder.
3. Mix the ground spices with turmeric powder, red chili powder, and salt.
4. Heat butter or ghee in a pan over medium heat.
5. Add the mashed potatoes, chickpeas, and Dabeli Masala. Mix well.
6. Add the chopped onions, cilantro, tamarind chutney, and date and the tamarind chutney. Mix well.
7. Split the pav buns in half and toast them lightly.
8. Assemble the Dabeli by spreading the potato-chickpea mixture on the pav bun, followed by a sprinkle of sev.
TIPS AND VARIATIONS:
- Use a mix of spices, such as garam masala or chaat masala, to add depth to the Dabeli Masala.
- Add some chopped tomatoes or bell peppers to the potato-chickpea mixture for extra flavor and texture.
- Use different types of chutneys, such as garlic chutney or green chutney, to add variety to the Dabeli.
