 MATAR PANEER MUSHROOM MASALA

INGREDIENTS:


For the masala paste:


- 1 small onion, chopped

- 2 cloves garlic, minced

- 1 small ginger, chopped

- 1 tablespoon cumin seeds

- 1 tablespoon coriander seeds

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- Salt, to taste


FOR THE CURRY:


- 250 grams paneer (Indian cheese), cut into small cubes

- 1 cup fresh or frozen peas (matar)

- 1 cup sliced mushrooms (button or cremini)

- 2 medium onions, chopped

- 2 cloves garlic, minced

- 1 tablespoon butter or ghee

- 2 tablespoons vegetable oil

- 2 tablespoons tomato puree

- 1 tablespoon heavy cream or half-and-half

- Chopped cilantro, for garnish


INSTRUCTIONS:-


1. Make the masala paste:-


    - Heat oil in a pan over medium heat.

    - Add cumin seeds and coriander seeds, and let them sizzle.

    - Add chopped onion, garlic, and ginger, and sauté until the onion is translucent.

    - Let cool, then grind into a smooth paste.


2. Make the curry:


    - Heat butter or ghee in a pan over medium heat.


    - Add chopped onions and sauté until they're translucent.


    - Add minced garlic and sauté for another minute.


    - Add sliced mushrooms and sauté until they're tender.


    - Add the masala paste, tomato puree, and heavy cream or half-and-half. Mix well.


    - Add paneer cubes, peas, and salt. Mix gently.


    - Simmer for 10-15 minutes or until the sauce thickens.


3. Garnish with chopped cilantro and serve with naan, roti, or rice.



   


TIPS AND VARIATIONS:


- Use fresh or frozen peas for the best flavor.


- Add some chopped bell peppers or cauliflower for extra flavor and texture.


- Use different types of mushrooms, such as button, cremini, or shiitake.


- Add some kasoori methi (dried fenugreek leaves) for added depth of flavor.


- Serve with a dollop of raita (yogurt and cucumber sauce) to cool down the spiciness.
