A popular Kashmiri dish ! A simple recipe for Paneer Changenzi
Ingredients:
- 250 gm paneer (Indian cheese), cut into small cubes
- 2 medium onions, chopped
- 2 medium tomatoes, chopped
- 2-3 green chilies, chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- Salt, to taste
- 2 tablespoons mustard oil or vegetable oil
- Chopped cilantro, for garnish
Instructions:
1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
2. Add chopped onions and sauté until they're translucent.
3. Add ginger paste, garlic paste, and green chilies. Sauté for another minute.
4. Add chopped tomatoes and sauté until they're soft and mushy.
5. Add cumin powder, coriander powder, turmeric powder, red chili powder, and garam masala powder. Mix well.
6. Add paneer cubes and mix gently.
7. Add salt to taste and 1/2 cup water. Mix well.
8. Reduce heat to low and simmer for 10-15 minutes or until the paneer is coated in the spicy gravy.
9. Garnish with chopped cilantro and serve with rice or roti.

- Use Kashmiri red chilies for an authentic flavor.
- Add a splash of lemon juice for extra flavor.
- Use ghee instead of oil for a richer flavor.
- Add some crushed cardamom or cinnamon for extra aroma.
