INGREDIENTS:


For the dough:


- 2 cups whole wheat flour

- 1 teaspoon salt

- 1/4 teaspoon sugar

- 1/2 teaspoon ghee or oil

- 1/2 cup lukewarm water



For the paneer filling:


- 250 gm paneer, crumbled

- 1/2 cup chopped fresh cilantro

- 1/2 cup chopped scallions (green onions)

- 1/2 teaspoon garam masala powder

- 1/2 teaspoon cumin powder

- 1/4 teaspoon red chili powder

- Salt, to taste

- 1 tablespoon lemon juice



INSTRUCTIONS:



1. In a large mixing bowl, combine the flour, salt, sugar, and ghee or oil. Mix well.


2. Gradually add the lukewarm water to the flour mixture and knead for 5-7 minutes to form a smooth dough.


3. Cover the dough with a damp cloth and let it rest for 30 minutes.


4. Divide the dough into 6-8 equal portions.


5. Roll out each portion into a thin circle, about 6-7 inches in diameter.


6. In a small bowl, mix together the crumbled paneer, chopped cilantro, chopped scallions, garam masala powder, cumin powder, red chili powder, and salt.


7. Place a tablespoon or two of the paneer mixture in the center of each dough circle.


8. Fold the dough over the filling to form a triangle or a square shape, and press the edges together to seal the paratha.


9. Heat a non-stick skillet or griddle over medium heat. Cook the paratha for 1-2 minutes on each side, until golden brown and crispy.


10. Brush with melted butter or ghee, if desired. Serve hot with your favorite chutney or raita.
