INGREDIENTS:- 



For the Ghevar:



- 1 cup all-purpose flour

- 1/2 cup ghee or oil

- 1/2 cup lukewarm water

- 1/4 teaspoon salt

- 1/4 teaspoon baking soda



For the Malai:



- 2 cups full-fat milk

- 1 cup sugar

- 1/4 teaspoon ground cardamom

- 1/4 teaspoon saffron threads, soaked in 1 tablespoon hot water

- 1 tablespoon chopped nuts (such as almonds or pistachios)

- 1 tablespoon ghee or unsalted butter



INSTRUCTIONS:- 



1. To make the Ghevar:


    - In a large mixing bowl, combine the flour, ghee or oil, and salt. Mix until the dough comes together.


    - Gradually add the lukewarm water and mix until a smooth dough forms.


    - Knead the dough for 5-7 minutes until it becomes pliable.


    - Cover the dough with a damp cloth and let it rest for 30 minutes.


    - Divide the dough into small balls and shape each ball into a thin circle.


    - Heat a non-stick pan or a traditional ghevar mold over medium heat. Cook the ghevar for 2-3 minutes on each side, until it's golden brown and crispy.


2. To make the Malai:


    - In a large saucepan, combine the milk, sugar, and ground cardamom. Heat over medium heat, stirring occasionally, until the sugar dissolves and the milk comes to a boil.


    - Reduce the heat to low and simmer the malai for 10-15 minutes, or until it thickens slightly and coats the back of a spoon.


    - Stir in the saffron threads with their soaking liquid, chopped nuts, and ghee or butter.


3. To assemble the Malai Ghevar:


    - Place a cooked ghevar on a serving plate or tray.


    - Pour the warm malai over the ghevar, making sure it's completely coated.


    - Serve the Malai Ghevar immediately, garnished with additional chopped nuts and a sprinkle of cardamom powder.
