SHAHI PALAK PANEER

 A rich and creamy Indian dish! Here's a simple recipe for Shahi Palak Paneer


Ingredients:


For the palak puree:


- 1 bunch of fresh spinach leaves


- 1/2 cup water


- 1 tablespoon butter


- 1 clove garlic, minced


- 1/2 teaspoon cumin seeds



For the paneer mixture:


- 250 gm paneer (Indian cheese), cut into small cubes


- 1/2 cup heavy cream


- 1 tablespoon butter


- 1 teaspoon garam masala powder


- 1 teaspoon cumin powder


- Salt, to taste


For the shahi gravy:


- 2 tablespoons butter


- 2 tablespoons all-purpose flour


- 1 cup heavy cream


- 1/2 cup water


- 1 teaspoon garam masala powder


- 1 teaspoon cumin powder


- Salt, to taste


- Fresh cilantro, for garnish


Instructions:


1. Make the palak puree:


    - Blanch spinach leaves in boiling water, then puree in a blender with garlic, cumin seeds, and butter.


    - Strain the puree through a fine-mesh sieve to remove excess water.


2. Prepare the paneer mixture:


    - Heat butter in a pan over medium heat. Add paneer cubes and cook until golden brown.


    - Add heavy cream, garam masala powder, cumin powder, and salt. Mix well.


3. Make the shahi gravy:


    - Melt butter in a pan over medium heat. Add flour and cook for 1 minute.


    - Gradually add heavy cream and water, whisking continuously to avoid lumps.


    - Bring the mixture to a boil, then reduce heat and add garam masala powder, cumin powder, and salt.


4. Assemble the dish:


    - Add the palak puree to the shahi gravy and mix well.


    - Add the paneer mixture to the gravy and stir gently.


    - Simmer the mixture for 5-7 minutes or until the flavors have melded together.


5. Serve hot, garnished with fresh cilantro.
