      SPICY ALOO PARATHA

INGREDIENTS:


FOR THE DOUGH:- 


- 2 cups whole wheat flour

- 1 teaspoon salt

- 1 tablespoon ghee or oil

- ¾ cup lukewarm water



FOR THE FILLING:-


- 3-4 medium-sized potatoes, boiled, peeled, and mashed

- 1 medium onion, finely chopped

- 2-3 green chilies, finely chopped

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1 teaspoon garam masala powder

- 1 teaspoon amchur powder (optional)

- Salt, to taste

- 2 tablespoons lemon juice

- Chopped fresh cilantro, for garnish



INSTRUCTIONS:


1. To make the dough:


    - In a large mixing bowl, combine flour, salt, and ghee or oil. Mix well.


    - Gradually add lukewarm water and knead the dough for 5-7 minutes or until smooth.


    - Cover and let rest for 30 minutes.


2. To make the filling:


    - Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.


    - Add chopped onion and sauté until translucent.


    - Add mashed potatoes, green chilies, coriander powder, garam masala powder, amchur powder (if using), and salt. Mix well.


    - Squeeze lemon juice and mix again.


3. To assemble the parathas:


    - Divide the dough into 6-8 equal portions.


    - Roll out each portion into a thin circle.


    - Place a tablespoon or two of the potato filling in the center of each circle.


    - Fold the dough over the filling to form a triangle or square shape, and press the edges to seal.


4. To cook the parathas:


    - Heat a non-stick skillet or tawa over medium heat.


    - Place a paratha on the skillet and cook for 1-2 minutes or until golden brown.


    - Flip and cook the other side for another minute or until golden brown.


    - Repeat with the remaining parathas.


5. Serve hot with butter, chutney, or raita.
