INGREDIENTS:-
For the Dough:
- 2 cups rice flour
- 1 cup wheat flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1 tablespoon ghee or oil
- 1 cup lukewarm water
For the Filling:
- 1 cup grated coconut
- 1 cup jaggery powder
- 1/2 teaspoon cardamom powder
- 1/4 teaspoon nutmeg powder
- 1/4 teaspoon saffron threads, soaked in 1 tablespoon hot water
INSTRUCTIONS:-
For the Dough:
1. In a large mixing bowl, combine rice flour, wheat flour, salt, and baking powder.
2. Add ghee or oil and mix until the dough comes together.
3. Gradually add lukewarm water to the dough and knead for 5-7 minutes or until smooth.
4. Cover the dough with a damp cloth and let it rest for 30 minutes.
For the Filling:
1. In a separate mixing bowl, combine grated coconut, jaggery powder, cardamom powder, nutmeg powder, and saffron threads with soaked water. Mix well.
To Assemble the Modak:
1. Divide the dough into small balls, about the size of a small lemon.
2. Roll out each ball into a thin circle, about 3-4 inches in diameter.
3. Place a tablespoon or two of the coconut-jaggery filling in the center of each circle.
4. Fold the dough over the filling to form a triangle or a cone shape, and press the edges together to seal the modak.
5. Repeat with the remaining dough and filling.
To Steam the Modak:
1. Place the Modak in a steamer basket, leaving some space between each modak.
2. Steam the Modak over boiling water for 10-15 minutes or until they are cooked through and fluffy.
3. Serve the Uksdichi Modak warm or at room temperature.
Note: You can adjust the amount of jaggery powder to your taste, and also add other ingredients like chopped nuts or dried fruits to the filling for added texture and flavor.
