INGREDIENTS:- 

 



For the stuffing:



- 1/2 cup gram flour (besan)

- 1/2 cup grated onion

- 1/4 cup grated ginger

- 1/4 cup chopped cilantro

- 1/4 cup chopped mint leaves

- 1/2 teaspoon garam masala powder

- 1/2 teaspoon cumin powder

- 1/2 teaspoon coriander powder

- 1/4 teaspoon turmeric powder

- 1/4 teaspoon red chili powder

- Salt, to taste

- 2 tablespoons lemon juice

- 1 tablespoon ghee or oil



For the karela:



- 4-6 medium-sized bitter gourds (karela)

- Salt, to taste

- Water, for soaking



INSTRUCTIONS:- 



1. Soak the bitter gourds in salted water for 30 minutes. Drain and rinse them.


2. Scoop out the seeds and pulp from the bitter gourds, leaving a shell about 1/4 inch thick.


3. In a pan, heat 1 tablespoon of oil over medium heat. Add the grated onion, ginger, and cilantro, and cook until the onion is translucent.


4. In a bowl, mix together the cooked onion mixture, gram flour, garam masala powder, cumin powder, coriander powder, turmeric powder, red chili powder, salt, lemon juice, and ghee or oil.


5. Stuff each bitter gourd shell with the prepared stuffing mixture.


6. Heat 2 tablespoons of oil in a pan over medium heat. Add the stuffed bitter gourds and cook until they are golden brown on all sides.


7. Reduce the heat to low and cook the bitter gourds for 10-15 minutes, or until they are tender.


8. Serve the Bharwa Karela hot with roti, naan, or rice.
