DESCRIPTION:-

INGREDIENTS:-


*For the vadas:-* 


- 1 cup split black gram lentils (urad dal)

- 1/2 cup split Bengal gram lentils (chana dal)

- 1/4 teaspoon salt

- 1/4 teaspoon baking soda

- 1/4 teaspoon cumin seeds

- 1/4 teaspoon asafoetida (hing)

- 1 tablespoon ghee or oil

- Water, as needed


*For the dahi:-*


- 1 cup plain yogurt

- 1/2 cup water

- 1 tablespoon lemon juice

- 1/2 teaspoon cumin powder

- 1/2 teaspoon coriander powder

- Salt, to taste

- Chopped cilantro, for garnish


*For the chutneys:-*


- Tamarind chutney (available in stores or online)

- Green chutney (available in stores or online)

- Date and tamarind chutney (optional)


INSTRUCTIONS:-


*To make the vadas:-*


1. Rinse the lentils and soak them in water for at least 4 hours or overnight.


2. Drain and grind the lentils into a smooth paste using a blender or food processor.


3. Add salt, baking soda, cumin seeds, and asafoetida to the lentil paste and mix well.


4. Heat oil in a deep frying pan over medium heat.


5. Using a spoon, drop small balls of the lentil paste into the oil and fry until golden brown, about 3-4 minutes.


6. Remove the vadas from the oil and drain on paper towels.


*To make the dahi:- *


1. In a bowl, whisk together yogurt, water, lemon juice, cumin powder, coriander powder, and salt until smooth.


2. Refrigerate the dahi for at least 30 minutes to allow the flavors to meld.


*To assemble the Dahi Vada:-*


1. Soak the fried vadas in water for about 10-15 minutes to make them soft.


2. Squeeze out excess water from the vadas and place them in a serving dish.


3. Pour the chilled dahi over the vadas.


4. Garnish with chopped cilantro, tamarind chutney, green chutney, and date and tamarind chutney (if using).


5. Serve chilled and enjoy .




TIPS:- 


- Adjust the amount of chutneys and spices to suit your desired level of sweetness and spiciness.


- You can customize the recipe by adding other spices or herbs to the lentil paste or dahi.


- For a healthier option, bake the vadas in a preheated oven at 375°F (190°C) for 15-20 minutes, or until crispy and golden brown.
