INGREDIENTS:- 


_For the eggs:_


- 4-6 eggs, hard-boiled and peeled

- Salt, to taste


_For the masala sauce:_


- 2 medium onions, chopped

- 2 cloves garlic, minced

- 1 small ginger, grated

- 1 tablespoon vegetable oil

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1 teaspoon garam masala powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 2 medium bell peppers (any color), sliced

- 2 tablespoons tomato puree

- 1 cup water

- Fresh cilantro, chopped (for garnish)


INSTRUCTIONS:-


*To make the eggs:*-


1. Hard-boil the eggs, cool, then peel.


2. Sprinkle salt to taste.


*To make the masala sauce:-*


1. Heat oil in a pan over medium heat.


2. Add cumin seeds and let them sizzle.


3. Add chopped onions, minced garlic, and grated ginger. Sauté until the onions are translucent.


4. Add coriander powder, garam masala powder, turmeric powder, red chili powder, salt, and black pepper. Mix well.


5. Add sliced bell peppers and sauté for 2-3 minutes.


6. Add tomato puree and water. Bring the mixture to a boil.


7. Reduce the heat to low and simmer the sauce for 10-15 minutes or until it thickens.


*To assemble the dish:*-


1. Add the hard-boiled eggs to the masala sauce. Mix well.


2. Simmer the mixture for 2-3 minutes or until the eggs are well coated with the sauce.


3. Garnish with chopped cilantro and serve hot.
