INGREDIENTS:-


*For the basmati rice:*

- 2 cups basmati rice

- 4 cups water

- 1 tablespoon ghee

- 1 teaspoon salt


*For the marinade:*


- 1 pound boneless, skinless chicken or lamb

- 1/2 cup plain yogurt

- 2 tablespoons lemon juice

- 2 tablespoons ginger paste

- 2 tablespoons garlic paste

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- Salt, to taste


*For the biryani masala:*


- 2 tablespoons coriander seeds

- 1 tablespoon cumin seeds

- 1 tablespoon cinnamon sticks

- 2-3 green cardamoms

- 1/2 teaspoon mace powder

- 1/2 teaspoon nutmeg powder


*For the handi biryani:*


- 2 tablespoons ghee

- 1 medium onion, chopped

- 2 medium tomatoes, chopped

- 2-3 green chilies, chopped

- 1 teaspoon ginger paste

- 1 teaspoon garlic paste

- 1 tablespoon biryani masala powder

- Salt, to taste

- Fresh cilantro, for garnish


INSTRUCTIONS:-


1. *Prepare the basmati rice:* - 


Rinse the rice and soak it in water for 30 minutes. Drain the water and cook the rice with 4 cups of fresh water, ghee, and salt until it's 70% cooked. Drain the water and set the rice aside.


2. *Marinate the meat:* - 


Mix the marinade ingredients and apply them to the meat. Cover and refrigerate for at least 2 hours or overnight.


3. *Prepare the biryani masala:* - 


Dry roast the coriander seeds, cumin seeds, cinnamon sticks, and green cardamoms until fragrant. Grind them into a fine powder and mix with mace powder and nutmeg powder.


4. *Cook the meat:* -


Heat 1 tablespoon of ghee in a pan and cook the marinated meat until it's browned and cooked through. Set aside.


5. *Assemble the handi biryani:*- 


 Heat 1 tablespoon of ghee in a handi or a deep, heavy-bottomed pot. Add the chopped onion, tomatoes, green chilies, ginger paste, and garlic paste. Cook until the onion is translucent.


6. *Add the biryani masala and meat:* - 


Stir in the biryani masala powder and cooked meat. Cook for 2-3 minutes.


7. *Layer the rice and meat:* -


Layer the cooked rice and meat mixture in the handi, starting and ending with a layer of rice.


8. *Dum cooking:*- 


Cover the handi with a tight-fitting lid and cook over low heat for 10-15 minutes. This will allow the flavors to meld together and the rice to absorb the flavors.


9. *Serve:*-


 Turn off the heat and let the handi biryani rest for 5 minutes. Fluff the rice gently and garnish with fresh cilantro. Serve hot.
