INGREDIENTS:- 


*For the potatoes:*-


- 4-6 medium-sized potatoes, peeled and cut into 1-inch cubes

- 1/2 cup mustard oil or vegetable oil

- Salt, to taste


*For the masala sauce:*-


- 2 medium onions, chopped

- 2 cloves garlic, minced

- 1 medium ginger, grated

- 1 tablespoon cumin seeds

- 1 teaspoon coriander powder

- 1 teaspoon cumin powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon garam masala powder

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 2 tablespoons Kashmiri chili powder (or substitute with cayenne pepper)

- 2 tablespoons chopped fresh cilantro

- 2 tablespoons chopped walnuts or almonds (optional)

- 2 tablespoons lemon juice

- 1 cup water


INSTRUCTIONS:-


*To cook the potatoes:*-


1. Heat oil in a deep frying pan over medium heat.


2. Add the potato cubes and fry until they're golden brown and crispy.


3. Remove the potatoes from the oil and drain on paper towels.


4. Sprinkle salt to taste.


*To make the masala sauce:*-


1. Heat oil in a large saucepan over medium heat.


2. Add cumin seeds and let them sizzle.


3. Add chopped onions and sauté until they're translucent.


4. Add minced garlic and grated ginger and sauté for 1 minute.


5. Add coriander powder, cumin powder, turmeric powder, red chili powder, garam masala powder, salt, and black pepper. Mix well.


6. Add Kashmiri chili powder (or cayenne pepper) and mix well.


7. Add chopped cilantro, walnuts or almonds (if using), and lemon juice. Mix well.


8. Add water and bring the mixture to a boil.


9. Reduce the heat to low and simmer the sauce for 10-15 minutes or until it thickens.



*To assemble the dish:*-


1. Add the cooked potatoes to the masala sauce and mix well.


2. Simmer the mixture for 5-7 minutes or until the potatoes are well coated with the sauce.


3. Serve hot, garnished with chopped cilantro and walnuts or almonds (if using).
