Here's a recipe for Matar ki Kachori:


INGREDIENTS:-


*For the dough:*-


- 2 cups all-purpose flour

- 1 teaspoon salt

- 1/4 teaspoon baking powder

- 1/4 cup ghee or oil

- 1/2 cup lukewarm water


*For the filling:*- 


- 1 cup fresh or frozen peas

- 1/2 cup onions, finely chopped

- 1/4 cup ginger, finely chopped

- 1/4 cup green chilies, finely chopped

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1/2 teaspoon garam masala powder

- 1/2 teaspoon amchur powder

- Salt, to taste

- 2 tablespoons lemon juice

- 1 tablespoon ghee or oil


INSTRUCTIONS:-


1. *Prepare the dough:* - 


Mix the flour, salt, and baking powder in a bowl. Add the ghee or oil and mix until the dough comes together. Gradually add the lukewarm water and knead the dough for 5-7 minutes. Cover and let it rest for 30 minutes.


2. *Prepare the filling:*-

 

 Heat the ghee or oil in a pan over medium heat. Add the cumin seeds and let them sizzle. Add the chopped onions, ginger, and green chilies. Cook until the onions are translucent. Add the peas, coriander powder, garam masala powder, amchur powder, and salt. Cook for 5-7 minutes or until the peas are tender. Add the lemon juice and mix well.


3. *Assemble the kachoris:*- 


Divide the dough into 8-10 equal portions. Roll out each portion into a thin circle. Place a tablespoon or two of the pea filling in the center of each circle. Fold the dough over the filling to form a ball and then flatten it slightly into a disk shape.


4. *Fry the kachoris:*- 


Heat oil in a deep frying pan over medium-high heat. When the oil is hot, add the kachoris and fry until they are golden brown and crispy. Drain the kachoris on paper towels.


5. *Serve:*-
