INGREDIENTS:- 


*For the marinade:-


- 250 grams paneer (Indian cheese), cut into 1-inch cubes

- 1/2 cup plain yogurt

- 2 tablespoons lemon juice

- 2 tablespoons ghee or vegetable oil

- 2 teaspoons garam masala powder

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1/2 teaspoon cayenne pepper (optional)

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 2 cloves garlic, minced

- 1 tablespoon ginger paste

- Chopped cilantro, for garnish


*For the chutney (optional):-* 


- 1 cup mint leaves

- 1 cup coriander leaves

- 1/2 cup green chilies

- 1 small onion, finely chopped

- 2 cloves garlic, minced

- 1 tablespoon lemon juice

- Salt, to taste


INSTRUCTIONS:-


*To make the marinade:-*


1. In a bowl, whisk together yogurt, lemon juice, ghee or oil, garam masala powder, cumin powder, coriander powder, cayenne pepper (if using), salt, and black pepper.


2. Add the minced garlic and ginger paste to the marinade and mix well.


3. Add the paneer cubes to the marinade and mix gently to coat.


4. Cover and refrigerate for at least 30 minutes or up to 2 hours.


*To grill the paneer:-*


1. Preheat a grill or grill pan over medium heat.


2. Remove the paneer cubes from the marinade, allowing any excess to drip off.


3. Grill the paneer cubes until they're golden brown and slightly charred, about 3-4 minutes per side.



*To serve:-*


1. Garnish with chopped cilantro and serve hot with your favorite chutney or sauce.


2. If desired, serve with a side of mint chutney (see below).


Mint Chutney Recipe (optional):-


1. In a blender or food processor, combine mint leaves, coriander leaves, green chilies, onion, garlic, lemon juice, and salt.


2. Blend until smooth and adjust seasoning as needed.


3. Serve chilled or at room temperature.
