DESCRIPTION:-

INGREDIENTS:-


*For the marinade:-*


- 1 pound boneless, skinless chicken or mutton, cut into small pieces

- 1/2 cup plain yogurt

- 2 tablespoons lemon juice

- 2 tablespoons ginger paste

- 2 tablespoons garlic paste

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- Salt, to taste


*For the biryani masala:-*


- 2 tablespoons coriander seeds

- 1 tablespoon cumin seeds

- 1 tablespoon cinnamon sticks

- 2-3 green cardamom pods

- 1/2 teaspoon mace powder

- 1/2 teaspoon nutmeg powder


*For the rice:-*


- 2 cups basmati rice

- 4 cups water

- 1 tablespoon ghee or oil

- Salt, to taste


*For the Saoji masala:-*


- 2 tablespoons ghee or oil

- 1 small onion, finely chopped

- 2 cloves garlic, minced

- 1 small tomato, diced

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- Salt, to taste


INSTRUCTIONS:-


*To make the marinade:-*


1. In a bowl, whisk together yogurt, lemon juice, ginger paste, garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, and salt.


2. Add the chicken or mutton pieces to the marinade and mix well.


3. Cover and refrigerate for at least 30 minutes or up to 2 hours.


*To make the biryani masala:-*


1. Dry roast the coriander seeds, cumin seeds, cinnamon sticks, and green cardamom pods in a small pan over medium heat, stirring frequently, until fragrant.


2. Grind the roasted spices into a fine powder using a spice grinder or mortar and pestle.


3. Mix in the mace powder and nutmeg powder.


*To cook the rice:-*


1. Rinse the basmati rice in a fine mesh sieve until the water runs clear.


2. Cook the rice in a large saucepan with 4 cups of water over high heat.


3. Add 1 tablespoon of ghee or oil and salt to taste.


4. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and fluffy.


*To make the Saoji masala:-*


1. Heat 2 tablespoons of ghee or oil in a large saucepan over medium heat.


2. Add the chopped onion and cook until softened, about 5 minutes.


3. Add the minced garlic and cook for 1 minute.


4. Add the diced tomato and cook until softened, about 2-3 minutes.


5. Stir in the cumin powder, coriander powder, turmeric powder, red chili powder, and salt.


6. Cook for 1-2 minutes, until the spices are fragrant.


*To assemble the Saoji Biryani:-*


1. In a large saucepan, create a layer of cooked rice.


2. Add a layer of the Saoji masala on top of the rice.


3. Add a layer of the marinated chicken or mutton on top of the Saoji masala.


4. Repeat the layers two more times, ending with a layer of rice on top.


5. Sprinkle the biryani masala powder over the top layer of rice.


6. Cover the saucepan with a tight-fitting lid and simmer over low heat for 10-15 minutes, until the flavors are combined and the rice is heated through.


7. Serve hot and enjoy
