DESCRIPTION:-

INGREDIENTS:-
*For the Vada:*
- 2 large potatoes, boiled, peeled, and mashed
- 1/4 cup gram flour (besan)
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh cilantro
- Oil for frying
*For the Pav:*
- 4-6 pav buns (available at Indian grocery stores or online)
- Butter or oil for toasting
*For the Green Chutney:*
- 1 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
- 1/2 cup green chilies
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon grated ginger
- 1 tablespoon lemon juice
- Salt, to taste
INSTRUCTIONS:-
*To make the Vada:-*
1. In a large bowl, combine the mashed potatoes, gram flour, turmeric powder, red chili powder, garam masala powder, salt, and baking soda. Mix well.
2. Add the lemon juice and chopped cilantro to the potato mixture and mix well.
3. Divide the mixture into 4-6 equal portions, depending on how large you want your vadas to be. Shape each portion into a round ball and then flatten it slightly into a disk shape.
4. Heat oil in a deep frying pan over medium-high heat. When the oil is hot, add the vadas and fry until they are golden brown and crispy, about 3-4 minutes on each side. Drain the vadas on paper towels.
*To make the Pav:-*
1. Toast the pav buns by applying butter or oil on both sides and grilling them until they are lightly browned.
*To make the Green Chutney:-*
1. In a blender or food processor, combine the cilantro leaves, mint leaves, green chilies, onion, garlic, and ginger. Blend until smooth.
2. Add the lemon juice and salt to the chutney and mix well.
*To assemble the Vada Pav:-*
1. Slice the toasted pav buns in half horizontally.
2. Place a fried vada on the bottom half of the pav bun.
3. Apply a layer of green chutney on top of the vada.
4. Place the top half of the pav bun on the vada.
5. Serve immediately and enjoy
