DESCRIPTION:


Mix Veg Tawa Fry is a vibrant, spicy, and semi-dry Indian stir-fry made with assorted vegetables sautéed on a flat griddle (tawa) along with aromatic spices. This dish is popular at roadside dhabas and is served as a side with roti, naan, or rice. It has a rich, tangy, and slightly smoky flavor that comes from cooking the veggies on high heat with minimal oil.


🥦 INGREDIENTS:


1 cup cauliflower florets


1 cup carrots (sliced)


1 cup beans (chopped)


1/2 cup green peas


1 onion (sliced)


1 capsicum (sliced)


2 tomatoes (pureed or finely chopped)


1 tsp ginger-garlic paste


1/4 tsp turmeric powder


1/2 tsp red chili powder


1 tsp pav bhaji masala or garam masala


1/2 tsp cumin seeds


Salt to taste


2 tbsp oil


Fresh coriander for garnish


Lemon wedges for serving


🔪 HOW TO MAKE MIX VEG TAWA FRY:


1. Boil cauliflower, carrots, beans, and peas until 80% cooked. Drain and set aside.



2. Heat oil on a tawa or pan. Add cumin seeds, then ginger-garlic paste. Sauté for a minute.



3. Add onions and cook till translucent. Add capsicum and sauté lightly.



4. Add chopped tomatoes or puree and cook till oil separates.



5. Mix in turmeric, chili powder, pav bhaji masala, and salt.



6. Add the boiled veggies. Mix well and fry on medium-high heat for 5–7 minutes.



7. Garnish with chopped coriander and lemon juice. Serve hot!



💡 TIPS FOR MIX VEG TAWA FRY :-


Use a cast iron tawa for the best smoky flavor.


Add a dash of butter at the end for dhaba-style richness.


You can include veggies like baby corn, zucchini, or mushrooms.


Don’t overcook the vegetables — they should be slightly 

crunchy.
