DHABA STYLE DAL TADKA KHICHDI


🌿 DESCRIPTION:-


Dhaba Style Dal Tadka Khichdi is a comforting yet flavorful one-pot meal made with rice, toor dal, and aromatic Indian spices. Unlike plain khichdi, this dhaba-style version is cooked to a creamy texture and finished with a smoky tadka of ghee, garlic, onion, tomatoes, and spices. It’s wholesome, protein-rich, and perfect to enjoy with papad, achar, and a dollop of ghee – a true desi comfort food with a restaurant-style touch.


🍲 INGREDIENTS:-


For Khichdi:


1 cup rice


½ cup toor dal (arhar dal)


¼ cup moong dal


1 medium onion (finely chopped)


1 medium tomato (finely chopped)


2 green chilies (slit)


1 tsp ginger-garlic paste


½ tsp turmeric powder


1 tsp red chili powder


1 tsp coriander powder


1 bay leaf, 1 cinnamon stick, 2 cloves


1 tsp cumin seeds


2 tbsp ghee


Salt to taste


4 cups water



For Tadka:


2 tbsp ghee


1 tsp cumin seeds


5–6 garlic cloves (sliced)


2 dry red chilies


A pinch of hing (asafoetida)


2 tbsp fresh coriander (chopped)



👩‍🍳 METHOD:-


1. Wash & Soak rice and dals for 20 minutes.



2. In a pressure cooker, heat ghee, add whole spices and cumin seeds.



3. Add onion, sauté till golden. Add ginger-garlic paste, tomato, and green chili.



4. Add turmeric, chili powder, coriander powder, and sauté well.



5. Add soaked rice & dal, salt, and 4 cups water. Pressure co Nhiok for 3–4 whistles.



6. Once cooked, mash lightly for creamy texture.




🔥 For Tadka:


1. Heat ghee in a pan, add cumin, garlic, dry red chilies, and hing.



2. Pour the hot tadka over the khichdi.



3. Garnish with coriander and serve hot with papad, achar, and curd.




TIPS:-


Serve in a clay handi or brass bowl.


Top with a spoon of hot ghee & fried garlic tadka right before serving.


Add a side of papad, pickle, onion slices, and green chili.


Serve with curd or raita to balance flavours.
